Gelato training using the Kangaroo Method

Here’s a revolution in ice cream balancing - learn how to balance ice cream in just one day.

This ice cream training is designed so that participants are actively involved from the very beginning. It’s learning through experience and great fun. Specially selected task sets are arranged similarly to video games: starting with a simple task, then adding additional features, and gradually becoming more complex.

No complicated math formulas, manual calculations, or complex Excel spreadsheets. The training is available for two people, which allows for joint analysis of each task and tailoring the learning process.

The goal of the training is to teach you how to create the flavor of dairy-based and sorbet ice creams (and even vegan and keto options) from scratch. You’ll also learn a new ice cream philosophy that will help you save money and reduce the time spent in the workshop. In addition, you’ll discover how to adjust the texture of your ice cream, enhance flavors, prevent ice crystal formation, create new flavors, and keep ice cream from becoming crumbly.

The training takes place in person in Zgorzelec. (Poland).

The most convenient airport is Wrocław (WRO), from which there are several daily train connections to Zgorzelec, where the training takes place. Dresden (DRS) is also nearby, and trains run from there as well. If you have any questions or need assistance with purchasing a train ticket, feel free to contact us.

- 8:00 AM - Breakfast - We discuss your business, problems, expectations, and ideas.
- 9:00 AM - Training begins.
- 1:00 PM - By this time, you’ll be able to design any sorbet and vegan keto ice cream.
- 1:15 PM - Lunch break.
- 2:00 PM - Return to the workshop and continue training.
- 2:30 PM - By this time, you’ll be able to design dairy-based ice cream. Our Record is 2:05 PM :)
- 3:30 PM - Production of the ice cream flavors (depending on time, one or two flavors) or continued theoretical training—your choice.
- 6:00 PM - The planned end of the training, although this may be extended if necessary.

It’s recommended to arrive in Zgorzelec the day before to ensure you are well-rested for the training. If possible, book two nights—one before the training and one after—to avoid the stress of traveling, which can affect your ability to absorb knowledge. Bring your personal laptop to comfortably work with the recipe.net app during the training.

I also offer on-site training at the client’s location. While individual training in Zgorzelec can be booked for just one person (if no second participant is available, the training will be held for one person), for on-site training, you pay for two participants. Additionally, for on-site training, I charge a daily fee that covers my travel, meals, and accommodation. For one-day training, this includes three days: I travel the day before to ensure I’m well-rested, and I leave the day after the training. This allows me to dedicate more time to participants on the training day.
